    Peel and cut the sweet potato and carrot into 0.5 inch (1.2cm) cubes. Toss them with 1 tablespoon of olive oil, dried rosemary, salt, and pepper. Spread them in a single layer on one side of the rimmed baking sheet. Roast in the preheated oven for 30 minutes, or until tender and lightly browned.

    Stir in the riced cauliflower, diced tomato, cumin, smoked paprika, salt, and black pepper. Simmer for 5 minutes until the cauliflower rice is tender and the liquid has slightly reduced.

    Spoon the bison and cauliflower rice mixture evenly into the hollowed red bell peppers. Pour 2 tablespoons of water into the bottom of the baking dish around the peppers to help them steam. Cover the dish tightly with foil. Bake alongside the roasting vegetables for 25 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.

    Pat the salmon fillet dry

    While the peppers and vegetables finish baking, pat the salmon fillet dry with a paper towel and season with salt and pepper. Heat the remaining 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Place the salmon skin-side down (if skin-on) and cook for 4 to 5 minutes until the skin is crispy. Flip and cook for an additional 3 to 4 minutes until the salmon is cooked through and flakes easily.
