Time saver
For easy meal preparation, you can use pre-cooked or leftover white rice. If using freshly cooked rice, let it cool slightly so it does not become mushy when sauteed.

Incorporate the greens and rice
Incorporate the greens and rice. Stir in the chopped kale and cooked white rice. Add a splash of water (about 1 tablespoon) to help steam the kale. Cook for 3 to 4 minutes, tossing frequently, until the kale is wilted and the rice is heated completely through.

Cook the egg
Cook the egg. Use a spoon to create a small well in the center of the rice mixture. Crack the egg directly into the well. Cover the skillet with a lid and cook over medium-low heat for 4 to 5 minutes, or until the egg white is completely set but the yolk remains soft.
Look for: the egg white is completely set but the yolk remains soft

Melt the cheese
Melt the cheese. Sprinkle the shredded cheddar cheese over the rice and chickpeas, avoiding the egg yolk. Cover with the lid for 1 additional minute until the cheese is completely melted. Slide the skillet mixture onto a plate and serve immediately.
