Prepare the crust dough: In a large bowl, whisk together the gluten-free flour and salt. Add the cold vegetable shortening and cut it into the flour using a pastry cutter or fork until coarse crumbs form with pea-sized pieces.

Bind the dough
Bind the dough: Drizzle ice water 1 tbsp at a time over the mixture, gently stirring until a workable dough comes together. Divide dough into two equal balls, flatten each into a disk, wrap tightly, and chill in the refrigerator for 30 minutes.

Roll the bottom crust
Roll the bottom crust: Place one disk of chilled dough between two sheets of parchment paper. Roll out into a 12-inch (30cm) circle about 1/8 inch (0.3cm) thick. Carefully peel off the top parchment paper and invert the dough into a 9-inch (23cm) pie dish, pressing gently into the bottom and sides.

Prepare the filling: Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the sliced apples with lemon juice, maple syrup, ground cinnamon, ground nutmeg, and gluten-free flour until the apple slices are evenly coated.

Assemble the pie: Transfer the apple filling into the prepared pie crust, mounding the apples slightly in the center. Roll out the second dough disk between parchment paper to a 12-inch (30cm) circle and gently lay it over the filling.

Trim and seal: Trim excess dough from the edges, fold the top crust under the bottom crust rim, and crimp the edges together to seal. Cut 4 short vent slits into the center of the top crust to allow steam to escape.

Bake: Bake at 400°F (200°C) for 20 minutes, then lower the oven temperature to 375°F (190°C) and bake for an additional 35 to 40 minutes until the crust is golden brown and the filling bubbles gently through the vents.
