    Prep the Salmon: Rub the salmon fillet evenly with the chilli paste and ginger paste. Season with a small pinch of salt.

    Slow-Roast the Tomato: Cut the tomato in half. Place the halves cut-side up in your air fryer basket. Lightly spray with olive oil and sprinkle with the dried mixed herbs and a tiny pinch of salt. Air-fry at 250°F (120°C) for 20 minutes until the tomato halves are slightly wrinkled, juicy, and concentrated in flavor. Remove and set aside warm.

    Air-Fry the Salmon: Increase the air fryer temperature to 390°F (200°C). Place the rubbed salmon fillet in the basket. Cook for 7 to 9 minutes, or until the salmon flakes easily with a fork and is cooked through to your liking.

    Saute the Mushrooms and Spinach: Heat the sesame oil in a small non-stick pan over medium heat. Add the garlic paste and stir for 30 seconds until fragrant. Add the sliced chestnut mushrooms and cook for 3 to 4 minutes until they release their moisture and turn golden brown. Toss in the baby spinach leaves, stirring constantly for about 1 minute until they are just wilted. Transfer to a serving plate.

    Scramble the Eggs: Wipe out the pan with a paper towel and place it back on low-medium heat. Crack the eggs into a small bowl, add a tiny pinch of salt, and whisk thoroughly with a fork. Pour into the warm pan and stir gently with a spatula, scraping the bottom of the pan continuously for 2 to 3 minutes until soft, creamy, and just set. Remove immediately from the heat.
