In a medium bowl or 1-pint (500ml) glass jar, combine the rolled oats, chia seeds, and ground flaxseed.

Add the Greek yogurt, unsweetened almond milk, and vanilla extract. Stir the mixture thoroughly until no dry pockets of oats remain.

Cover the jar tightly with a lid and place it in the refrigerator for at least 4 hours, or ideally overnight (up to 8 hours), to allow the oats to soften and thicken.
