Saute the Mushrooms and Spinach: Warm the olive oil in a non-stick skillet over medium heat. Add the sliced brown mushroom and cook for 3 to 4 minutes until browned and tender. Toss in the baby spinach and saute for 1 minute until just wilted. Transfer to a plate.
